Gourmet farmhouses
Although the singularity and excellence of the Basque gastronomy has been based on such recognisable elements as tapas, grill houses or the fabulous list of restaurants with the most prestigious distinctions, there is one other element that differentiates us: the gourmet farmhouses. If the open-doors of a restaurant represent the welcome in a gastronomic space, how much more enveloping and welcoming is it to sit at a table in a place that was once the home and dwelling of those who lived there.
These rural constructions, designed for farming and stockbreeding and that outline idyllic landscapes in Euskadi, are now restaurants where the characteristic materials of their construction, namely stone or wood, harmonize with fire and embers, with tradition and the avant-garde of everything to do with eating and drinking.
