Idiazabal, the basque cheese
Idiazabal cheese is one of the jewels of our gastronomy and one of the best sheep's cheeses in the world

Although it takes its name from a village in the Goierri region of Gipuzkoa, considered to be the territory of reference, this famous cheese is also produced in inland areas of Bizkaia and Álava.  

Its special flavour, balanced and intense, can be savoured in numerous hotel and catering establishments, but to learn more about the secrets of its elaboration, we suggest you visit one of our cheese factories or Idiazabal at the Cheese Interpretation Center, where they provide the clues to enjoying and appreciating Idiazabal cheese.
